Sweetcorn and spinach lagan

INGREDIENTS

  • 1 small onion
  • ½ green or red pepper
  • ½ cup spinach
  • 1 heaped tsp green chutney /chilli
  • 1 tsp salt
  • 6 eggs
  • 6 tablespoons soft butter
  • 1 cup grated sweet milk cheese
  • 2 tins cream style sweetcorn
  • 1 ½ cups flour or chicpea flour (I ran out, so I used flour)
METHOD
  • In a blender or food processor, add the onion, pepper, spinach, chilli, salt, eggs, butter, cheese, 1 tin sweetcorn, flour, and baking powder.
  • Give it a whizz on the lowest speed until everything is well blended, but still chunky. (Don’t blend for more than a minute.) Add in the remaining tin sweetcorn and stir well. (If you don’t want to see bits of sweetcorn and prefer a smoother texture, add both tins to the blender at the same time.)
  • Pour into a large, greased baking dish and sprinkle over some sesame seeds.
  • Bake in a preheated oven on 180 degrees for 30-40 minutes until its golden brown and a toothpick comes out clean.
