INGREDIENTS
- 2kg chicken pieces
- 3 eggs
- 1 heaped tablespoon chicken spice
- 1 heaped teaspoon garlic flakes
- ½ teaspoon white pepper
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt to taste (season it well)
- 3 large packets Simba Zinger Wings Chips
- 2 cups cornflakes
- Olive oil
METHOD
- Rinse and trim the chicken and cut into smaller pieces.
- In a large bowl, add the egg and spices and mix well. Add the chicken and mix until all the chicken is well coated and allow to marinade for a half hour.
- Add the chips and cornflakes to a food processor and pulse until it resembles a coarse crumb.
- Line a baking tray with baking paper.
- Dip your chicken in the crumbed, making sure it’s coated evenly.
Tip*If the crumb does not stick-the chicken had too much water and watered down the egg, add in an additional egg or egg dip before crumbling.
*Individually coating the chicken works better than shaking the chicken and crumbs in a bag, so please try and stick to the above method.
Once crumbed, transfer the crumbed chicken on the baking tray and sprinkle over the left-over crumbs for a extra crunchy effect.
Spray the chicken with olive oil or add a generous drizzle of oil. Transfer the chicken tray to the freezer. Freeze for an hour, allowing the crumb to set.
Bake on 200 degrees for 35-45 minutes until golden brown.
