Saucy Oven Fish

INGREDIENTS

  • 4 pieces of fish
  • 2 tomatoes (chopped)
  • 1 onion (Chopped)
  • 3 cloves of garlic (cleaned)
  • 1 handful of coriander (fresh)
  • 1 tsp tomato paste
  • 1 tsp chilli powder
  • ½ tsp turmeric
  • 2 tsp ground coriander
  • 3-4 tbsp oil
  • Juice of ½ lemon
  • 1 tsp salt
  • 1 sprig of curry leaves
  • 2 potatoes (cut into wedges)

METHOD

Pre heat oven to 180℃

To a blender add in tomatoes, onions, garlic and fresh coriander and blend until smooth.

Pour out the blended ingredients into a mixing bowl then add in tomato paste, chilli powder, turmeric, ground coriander, lemon juice, salt and curry leaves and combine with a spoon.

In an oven dish, add in oil and 1/3 of the sauce\marinate, then place the fish into the mixture. Thereafter evenly pour over the last of the remaining sauce\marinate and arrange the potatoes along the sides of the dish.

Place the fish in the oven and cook for 35-45 minutes. Once its fully cooked serve immediately along with some dhal, rice and/ or roti and enjoy
