INGREDIENTS
- 300g SPAR Freshline cubed pumpkin
- 1 SPAR egg
- 15 ml (1 Tbsp) sugar
- 15 ml (1 Tbsp) oil
- 500 ml (2 cups) flour
- 5 ml (1 tsp) baking powder
- Pinch of alt
- 15 ml (1 Tbsp) vanilla essence
METHOD
- Boil the pumpkin until soft. Drain and keep the water. You will be needing it later. Set aside the pumpkin to cool.
- Whisk together the egg, sugar and oil until well combined.
- Mash the pumpkin until there are no more lumps.
- Sieve the flour, baking powder and salt and combine with the egg mixture. Add in the mashed pumpkin and mix together until combined. Add in the reserved pumpkin water until a thin mixture is formed. Add the vanilla essence.
- Shallow-fry spoonful of the mixture in a pan until golden brown on either side.
- Serve warm with cinnamon sugar.
