INGREDIENTS
For the marinade:
- 1kg Chops (I prefer leg chops)
- 1 tablespoon red masala or
- 1 tablespoons garlic and ginger +1 teaspoon crushed red chillies
- 1 tablespoons lemon juice
- 2 heaped teaspoons coriander (koljana)
- 1 heaped teaspoon cumin (jeera)
- 1 teaspoon turmeric
- ½ teaspoon garam masala
- 2 tablespoons lemon juice
- 3 tablespoons tomato sauce
- 3 tablespoons oil
Additional Ingredients:
- 4-5 potatoes peeled and cut in thin wedges
- 2 onions sliced
- 2 tomatoes sliced with skin on
- 1 green pepper cut in strips
- 2 green chillies slit in half (more if you prefer heat)
- Freshly chopped coriander
METHOD
Marinade the Chops for at least 2 hours or overnight
Mix together all the veg and add to a roasting dish
Top with the Chops spread out evenly
Bake on 180 degrees for 1 hour. Turn the Chops and move some of the veg and potato to the top to brown. Grill for half hour and serve.
Garnish with freshly chopped coriander.
Tip
*Do not cover with foil this will avoid the Chops drawing excess water.
*If you are using Cutlet or Loin Chops it cooks quicker so reduce time by 15 minutes.
