Mac and Cheese

INGREDIENTS 

  • 2 cups cooked macaroni
  • 3 tablespoons butter
  • 1 tablespoon Ina parmans potato spice
  • 1 cup pasta water
  • 2 cups milk
  • 2 teaspoons cornflour
  • 200g Cheese diced into small blocks (not grated)

METHOD

1.Boil the macaroni in water with salt and a dash of olive oil until al dente.

2.Save 1 cup of pasta water and strain and set aside.

3.Heat the butter in a pot.

4.Once melted add in the potato spice, give a quick stir and allow the flavours to infuse.

5.Add in the milk and pasta water and bring it to a slow boil.

6.Add in the cornflour (mixed with a little cold milk to make a paste)

7.Add in the pasta and cheese, stir well and simmer on a low heat for 2-3 minutes to allow for cheese to melt.

8.Serve as is or add cheese and grill until the cheese melts.
