Coffee muffins

Ingredients
1 egg
½ cup soft butter
¾ cup sugar
1 tsp vanilla essence
2 cups flour
2 tsps baking powder
¾ cup milk
¼ cup cooled boiling water
2 tablespoons coffee
Pinch of salt
¾ cup chocolate vermicelli (or extra if you like)
Method
In a cup mix the coffee with the milk and water. Allow to cool completely.
In a large bowl whisk together the egg, butter, sugar and vanilla essence until light and creamy. Add the flour, baking powder and salt.
Add the cup of cold coffee and mix until well combined.
Fold in the chocolate vermicelli.

Fill a muffin cup with ¾ full batter and bake in a preheated oven on 180 degrees for 20 minutes or until a toothpick comes out clean.
