Chicken meat ball pita and tzatziki

INGREDIENTS

  • 500g chicken mince
  • ½ large onions (fine dice)
  • 1 small handful chopped parsley.
  • 1 small handful chopped coriander.
  • ½ tsp salt
  • ½ tsp chilli powder
  • ½ tsp ground cumin
  • ½ tsp ground fennel
  • ½ tsp ground coriander
  • ½ tsp garlic and ginger paste
  • 1 slice of white bread (made into breadcrumbs)
  • 2-3 green chillies (finely chopped)
METHOD

To a bowl add in all your above-mentioned ingredients and combine until fully incorporated.

Use a tablespoon to measure a portion of the mixture and roll into balls (using the measuring spoon will give you equal and uniformed sizes). Shallow fry in oil on high 1-2 minutes on each side or until fully cooked, then drain on paper towel and serve in pita bread with hummus and tzatziki.

Tzatziki

INGREDIENTS

  • ½ large cucumber
  • 1 cup full cream plain yoghurt
  • 1 clove of garlic
  • 1ml (pinch) of salt

METHOD

Grate your cucumber on the big side of the grater. Place onto a clean cloth and then ring out the water by squeezing and twisting the cloth. Once most of the water is out, place the grated cucumber into a mixing bowl. Add the minced clove of garlic, the yoghurt and salt. Mix all ingredients together, and your tzatziki is done.

Serving suggestions: as a dip for a mezze platter or topping for pita. Enjoy. . .
