INGREDIENTS
Curry:
- 3 large onions (sliced)
- 100g butter
- 3 tbsp oil
- 2 stick cinnamon
- 2 cardamom
- 2 large tomatoes (blended)
- 1 tbsp garlic and ginger paste
- 1 tbsp ground fennel
- 1 tbsp ground coriander
- ½ tbsp ground cumin
- 1 tsp turmeric powder
- 1 tbsp chili powder
- 1 tsp salt
- 1 tbsp tomato paste
Chicken balls:
- 1 kg chicken mince
- 1 large onion (finely diced)
- 4 slices of white bread (ground into breadcrumbs)
- 1 tsp ground fennel
- 1tsp ground coriander
- 1tsp ground cumin
- ½ tsp turmeric
- 1 tsp chili powder
- 3 green chillies (thinly sliced)
- 1 heaped teaspoon garlic and ginger paste
- 1 hand full coriander (chopped)
- 1 hand full parsley (chopped)
- 1 egg
- 1 tsp salt
METHOD
Curry:
Sauté onions in butter and oil with whole spices until soft and translucent. Add in ground spices, tomatoes, tomato paste and garlic and ginger paste. Cook for 20-30 minutes adding water occasionally and stirring occasionally.
Chicken balls:
Combine all ingredients in a bowl, then roll them into balls then add directly to the curry. Simmer for 15-20minutes till cooked .Garnish with freshly cut coriander and serve with savoury rice or roti.
