Banana Bread

INGREDIENTS

  • 150 g soft butter
  • 250 ml castor sugar
  • 2 eggs
  • 5 ml vanilla essence
  • 500 ml cake flour
  • 10 ml baking powder
  • 5 ml bicarbonate of soda
  • 2 ml salt
  • 50 ml pecan nuts
  • 15 ml chocolate chips
  • 100 ml full cream milk
  • 4 large bananas (mashed)
  • 30 ml lemon juice

METHOD

  • Preheat oven to 180℃
  • Cream butter and sugar together. Add eggs one at time, beating well after each addition until light and creamy. Add vanilla essence.
  • Sift flour, baking powder, bicarbonate of soda and salt together. Add nuts and chocolate chips.
  • Add dry ingredients to the egg mixture, alternate with milk and lemon juice.
  • Mix well. Add mashed bananas.
  • Grease two bread loaf tins and divide the batter between the two.
  • Bake in a preheated oven at 180℃ for 45 minutes to 1 hour.
  • Once baked allow to cool for 5 minutes then turn it out of the pan and allow to cool completely, then cut and enjoy.
