INGREDIENTS
- 150 g soft butter
- 250 ml castor sugar
- 2 eggs
- 5 ml vanilla essence
- 500 ml cake flour
- 10 ml baking powder
- 5 ml bicarbonate of soda
- 2 ml salt
- 50 ml pecan nuts
- 15 ml chocolate chips
- 100 ml full cream milk
- 4 large bananas (mashed)
- 30 ml lemon juice
METHOD
- Preheat oven to 180℃
- Cream butter and sugar together. Add eggs one at time, beating well after each addition until light and creamy. Add vanilla essence.
- Sift flour, baking powder, bicarbonate of soda and salt together. Add nuts and chocolate chips.
- Add dry ingredients to the egg mixture, alternate with milk and lemon juice.
- Mix well. Add mashed bananas.
- Grease two bread loaf tins and divide the batter between the two.
- Bake in a preheated oven at 180℃ for 45 minutes to 1 hour.
- Once baked allow to cool for 5 minutes then turn it out of the pan and allow to cool completely, then cut and enjoy.
