Baked Cheesecake

INGREDIENTS 

For the base:

  • Âľ packet Marie biscuits
  • 2 tablespoons sugar
  • 80g butter
  • Method for the base
  • Process the biscuits in a food processor until fine. Add in the sugar and melted butter and mix well.
  • Line the bottom of a large dish and use the bottom of a glass to smooth and level out the base. I wanted a more crumbly texture, but if you want more of a thicker base, use the full packet biscuits and 100g of melted butter.
  • Bake on 180 degrees for 15 minutes until its golden brown. Set aside and allow to cool completely.

For the Cheesecake:

  • 720g homemade cream cheese
  • (Or room temperature store bought cream cheese)
  • 2 tablespoons vanilla essence
  • 3 eggs
  • 1 tin condensed milk
  • ÂĽ cup lemon juice
  • ÂĽ cup cake flour

METHOD

In a cake or stand mixer, mix the cream cheese on a low speed until smooth and creamy. Add in the vanilla essence, eggs, and condensed milk. Mix until well combined. Add in the lemon juice and cake flour and mix until smooth and silky. Refrigerate for at least an hour, allowing the cream cheese to firm up. Once cold, pour over the cooled biscuits base and bake on 175 degrees for 35 minutes until the sides are golden brown

Serve with berries and cream or enjoy as is đź’•
