Mini Chicken Bunny Chow

INGREDIENTS

  • 2 Tablespoons Butter
  • 2 tablespoons oil
  • 1 Onion, Finely Chopped
  • 2 red dried chillies
  • 1 tsp jeera seeds
  • 1 tsp mustard seeds
  • 500g Chicken Fillets, Cubed
  • 1 Tablespoon Garlic and Ginger
  • 3 Teaspoon Ground Fennel (Barishap
  • 2 Teaspoon Ground Cumin (Jeera)
  • 1 Teaspoon Ground Coriander (Dhania)
  • 1 Teaspoon Turmeric
  • 1 Tablespoon Sprinkles and Spice Tandoori Masala
  • 1 Tablespoon Srinkles and Spice Orange Pepper
  • 4 Tomatoes, Grated
  • 1 tablespoon Tomato Paste
  • 1-2 Tins Butter Beans

METHOD

1.On a stove top, in a pot, on a medium to high heat, braise the onion in oil and butter.

2.Add the dried chilli and seeds.

3.Once the onions are translucent, add the chicken, garlic and ginger and braise until slightly browned.

4.Add in the tomato, tomato paste and 1 cup water and simmer for 10 minutes, until the chicken is cooked and the tomato has thickened.

5.Once ready add in the spice, beans, and stir and simmer on a low heat for 5 minutes.

6.Add salt to taste and garnish with freshly chopped coriander and green chillies.

7.Cut a whole in cocktail round roll and fill it with the chicken to make bunny chows and serve with a side of tomato and onion sambal, jam slaai and yoghurt.
