Char Siu Chicken

Char Siu Chicken is a delicious Cantonese dish. It’s marinated in a sweet-savoury glaze, then roasted or grilled to perfection.

Servings and Cooking Time

Servings: Serves 4-6.

Marination Time: 4 hours to overnight.

Cooking Time: 30-35 minutes.

Total Time: Approximately 4.5-12 hours (including marination).

INGREDIENTS 

  • Marinade:

    · ¼ cup hoisin sauce

    · 2 tbsp soy sauce (light or regular)

    · 1 tbsp dark soy sauce (for colour, optional)

    · 2 tbsp honey

    · 2 tbsp brown sugar

    · 1 tbsp oyster sauce

    · 1-2 tablespoons of chicken or vegetable stock or halaal Mirin

    · 1 tsp five-spice powder

    · 1 tsp sesame oil

    · 2 cloves garlic, minced

    · 2 tsp chopped ginger, grated

  • Chicken:

    · 1 kg chicken thighs or drumsticks (boneless or bone-in)

METHOD

Prepare the Marinade:

In a bowl, whisk together all the marinade ingredients until the sugar dissolves and forms a smooth mixture.

Marinate the Chicken:

Place the chicken in a large zip-lock bag or bowl. Pour the marinade over the chicken, ensuring each piece is well coated. Seal and refrigerate for at least 4 hours, preferably overnight for best flavour.

 

Choose your cooking method:

Oven Method:

· Preheat the oven to 200°C (400°F). Line a baking sheet with foil and place a rack on top.

· Arrange the marinated chicken on the rack, reserving any extra marinade.

· Roast for 20-25 minutes, basting with the reserved marinade halfway through.

· Finish with a few minutes under the grill or broiler to caramelize the glaze.

Grill Method:

Heat the grill to medium-high and cook the chicken for 6-8 minutes per side, basting with the marinade as it cooks.

Rest and Serve:

Let the chicken rest for 5 minutes before slicing. Garnish with sesame seeds and chopped green onions if desired.

· Serve with steamed rice, noodles, or in a bao bun.

· Pair with stir-fried vegetables or an Asian slaw for a balanced meal.
