INGREDIENTS
- 1 small onion
- ½ green or red pepper
- ½ cup spinach
- 1 heaped tsp green chutney /chilli
- 1 tsp salt
- 6 eggs
- 6 tablespoons soft butter
- 1 cup grated sweet milk cheese
- 2 tins cream style sweetcorn
- 1 ½ cups flour or chicpea flour (I ran out, so I used flour)
METHOD
- In a blender or food processor, add the onion, pepper, spinach, chilli, salt, eggs, butter, cheese, 1 tin sweetcorn, flour, and baking powder.
- Give it a whizz on the lowest speed until everything is well blended, but still chunky. (Don’t blend for more than a minute.) Add in the remaining tin sweetcorn and stir well. (If you don’t want to see bits of sweetcorn and prefer a smoother texture, add both tins to the blender at the same time.)
- Pour into a large, greased baking dish and sprinkle over some sesame seeds.
- Bake in a preheated oven on 180 degrees for 30-40 minutes until its golden brown and a toothpick comes out clean.
