Vegetarian Quiche

Ingredients

1 sheet of puff pastry
2 cups baby spinach
3 cloves of garlic
2 cups of mushrooms, chopped
1/2 cup chopped peppadews
3 rounds feta
1 tbsp smoked paprika
Salt to taste
Black pepper
1 cup cheddar, grated
250g (one tub) plain cream cheese
250ml milk
8 eggs

Method

Preheat the oven to 180 degrees.

Grease a quiche pan or a casserole dish, and line with the puff pastry

In one bowl, mix together the chopped vegetables and seasoning and put into the puff pastry. At this point you can also add a protein of your choice like cooked chicken or Biltong. Combine the cream, the cheeses and the eggs, and pour over the veggies. Bake in your preheated oven for 45 minutes to one hour. Allow to rest for 10 minutes before serving with a salad or some roasted vegetables.

I usually make this into mini quiches, lining muffin pans with puff pastry

From frozen: do not pre heat oven, bake for 40+ minutes

In airfryer: bake for 20 minutes at 180 degrees. From frozen, bake for about 30 minutes
